I love roasted salsa’s and usually have a jar or two of a small batch brand on hand. You know its going to be good when the list of ingredients reads like a recipe you would like to make. Salpica brand is excellent as it is the company started by famed chef Rick Bayless – the Urban Cowgirl had a slight char flavor, with that peek of Chipotle and sweetness from peaches. Exceptional!

I like boneless skinless chicken thighs because they cook up fast and are moist and flavorful. They were also on sale. Here is the recipe – don’t blink or you will miss it.

Salsa Chicken

  • 6 to 8 boneless skinless chicken thighs
  • Salt and freshly ground black pepper
  • 2 tablespoons cornstarch or flour
  • 1 jar Salpica Salsa – or your favorite brand

Season boneless skinless chicken thighs with salt and pepper on both sides – dust with cornstarch – brown very well on both sides in a little olive oil in a non-stick skillet – add jar of salsa – allow to bubble over medium low for 15 minutes – serve with broccoli.
