High Protein Super Fudgy Brownies

These 'flourless' brownies are fantastic. I could tell they were going to be so good when I hit the button on the food processor and the batter was smooth, rich and very fudgy with a back flavor of mocha. Yum! Coffee lifts the flavor of Cocoa and since there isn't any flour to mute the cocoa... it shines!
Ingredients
  • Vegetable cooking spray
  • One, 15 ounce can black beans, well rinsed & drained - SURPRISE!
  • ½ cup Truvia baking blend, the kind in the bag
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 3 large eggs
  • ½ cup Dutch cocoa - smoother, richer, less bitter
  • 1 single serving sleeve Starbucks Via, ready brew instant coffee (really puts dish over the top, buy one at Starbucks!)
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup chopped sugar free or dark chocolate - you can also use mini bittersweet or semi sweet chips
Instructions
  1. Spray an 8 x 8 inch baking dish with vegetable oil cooking spray. Preheat oven to 350 degrees.
  2. Puree the black beans in food processor until fairly smooth. Scrape down sides and add Truvia, butter, vanilla and one egg. Process until very smooth. Scrape down sides and add 2 remaining eggs, cocoa, Via, baking powder, salt and chopped chocolate. Process until well blended, scraping down sides and processing to a creamy batter.
  3. Pour batter into prepared pan and bake until toothpick inserted 2 inches from center tests done, 18 to 25 minutes. Cool completely before cutting into two-inch squares.

    Nutrional value is very important.  To not publish it seems sneaky and lends to people not trusting this site..

      Lol… that is amusing but thank you for your opinion. I don’t post nutritional values as a protest against all the recipe blog sites that post incorrect stats. You should NEVER trust a recipe site unless it is run by a professional – calculate your own recipe stats based on how you prepare the recipe. Too many ‘bloggers’ adjust their recipes to make them seem lower in calories and people get hurt. – Susan

      I think its too difficult to post nutritional information, as people will take it exactly as posted and there are too many variables. Besides serving size, the ingredients you select make a big difference. Take for example if you used butter verses a light margarine is over 180 calorie difference in the recipe. I even found a big difference in the black beans you select.

      I use My Fitness Pal and import the recipe and then substitute the items with the exact brands that I use and the portion size I am going with. I’ve gotten this recipe down to 157 calories with 7 grams of protein (5 sugars – can’t find the sugar free chips), and I cut my pan into 9 servings.

      For me calorie & protein count are very important as I am tracking daily with my nutritionist.

      It depends on how small you cut the squares. If you cut the square pan into 5 by 5 there are 25 servings, if you cut it into 4 by 4 there are 16 servings. Thats why we dont do serving size or nutrition stats.

    I’ll be getting Gastric Bypass Surgery a week from tomorrow. I know at first I won’t be able to have this, however I am curious about one thing. Are we allowed to eat Dark chocolate? Or did you mean sugar free dark chocolate?

      The beans made it a NO WAY for me too for years when people were making versions of this. I would rather have NOTHING, than have a beany sub standard fake brownie. HOWEVER, this is fudge-like, rich, deep dark and moist. Its delicious without any trace of bean! Its the Starbucks via that really makes my version completely bean free in taste. Try it, you wont believe it either. I dont tell anyone eating them there are beans as many have same reaction as you and I… lol.

    This is an amazing recipe. Tried it for the first time today and it is absolutely delicious!! Even my husband loved them! I used a teaspoon of espresso powder since I didn’t have any Starbucks Via. It was wonderful nonetheless!! Another first rate recipe Susan!!
