I love assembling ingredients on a pretty plate into a fresh salad. Its a great way to eat!

It is easy for me to cut a grapefruit or orange into ‘supremes’ but you can also buy them in the produce section in a jar. This one is just fantastic even in the fall when the red grapefruit are peak season.

Shrimp Citrus Avocado Salad

Ingredients
  • 1 grapefruit - or ½ cup grapefruit sections - in chilled produce case
  • 1 pound large shrimp - poached or seasoned & sautéed, or buy pre cooked
  • 1 ripe avocado
  • ½ cup Greek yogurt
  • 1 teaspoon Hidden Valley Ranch dressing powder packet
  • Sriracha sauce or Tabasco
Instructions
  1. Arrange layers of grapefruit, avocado and shrimp. Blend Greek yogurt with ranch powder and 1 teaspoon Sriracha sauce or to taste. Drizzle over salad. Serve.

      I am sorry but we do not calculate nutritional values for our recipes. In the world of the internet, trust no one… calculate your own portion sizes and stats. IF a recipe contains only healthy bariatric foods as ingredients, its a good choice meal. Portion size means NOTHING… eat until you are feeling satisfied and that is different for all of us. Portion size encourages clean plate eating. Everything in this dish is super healthy… so eat protein first with bites of the other elements until you are satisfied. That is how to practice bariatric eating.

      Serving size means nothing… it depends on how much you can eat. I make this with 5 large shrimp and some days I can eat all of them and some days I can’t. Some days I make this with Grapefruit and some days I may use an Orange. Maybe Crab legs are on sale… all of these things change the stats and our pouch dictates portion size. Don’t worry about portion size. Estimate it, eat protein first with small bites of fruits and vegetables until full or satisfied.

    Thank you for a very good summer salad idea. I’m not a fan of shrimp so I substituted with grilled chicken. Otherwise I followed your recipe using an orange. It was delicious and satisfying. Next time I think I’ll add some baby greens.
