I often use shrimp in my BE Easy small meals because they have a great ‘bariatric friendly’ texture, are quite affordable, and pair well with many items. This meal was simple to assemble: Jumbo shrimp over raw baby kale with edamame and a bit of 2% Mexican blend cheese. Topped with a sprinkle of Williams Sonoma vegetable seasoning and paired with Skinnygirl Honey Dijon dressing, it is a great balance of items on one small plate.
