Sheet Pan Suppers: Greek Salmon
  • Salmon filet (can use individual portions if desired)
  • ½ tablespoon Greek Seasoning
  • Lemon, sliced
  • Red Onion, sliced
  • 1 cup Cherry tomatoes
  • ½ cup Kalamata Olives
  • Green onions
  • ½ tablespoon Olive Oil
  • Salt, Pepper to taste
  • Optional Garnish: Crumbled Goat or Feta Cheese
  1. Pre-Heat Oven to 425
  2. Line a Sheet Pan with Parchment
  3. Slice lemon and onion into ¼ inch slices
  4. Wash tomatoes and trim the green onions
  5. Lay the salmon on one side of the pan.
  6. Sprinkle Greek Seasoning on top and if desired pepper
  7. Layer onion slices and lemon on top of salmon
  8. Arrange remaining onion, lemon, tomatoes, olives and green onions on the pan.
  9. Sprinkle vegetables with salt and pepper
  10. Drizzle Olive Oil on everything
  11. Bake until salmon is opaque and flakes with a fork, about 15-20 min depending on the size of your filet.
  12. Serve over mixed greens, top with ½ a teaspoon of the Cheese Crumbles if desired.
