I am an Italian girl so I love Sausage and Peppers.

Make sure you buy good quality sausage from an Italian store or butcher if at all possible. The supermarket stuff is mosly white in color due to the fat content. What I buy from the butcher is meaty and flavorful with very little fat. I love this dish.

Arrange the sausage and sliced vegetables – this is a mix of red orange and yellow peppers, portobello mushrooms & sliced red onion – on the lightly greased Sheet Pan or Grill Pan. Roast in preheated oven for 20 minutes at 375 degrees.

Slice the sausages on an angle and toss with the roasted vegetables in a large serving bowl. Add a large spoon.
