As bariatric post ops it’s good for us to follow the rule of eating ‘Protein First followed by nutrient rich vegetables’. The most common complaint is that ‘food gets stuck!’ What if you could use vegetables to add incredible flavor and moisten your chicken, fish, or beef to make it easier to eat? Grape tomatoes should be your new best friend!

These little gems are crazy healthy, sweet, and juicy! Cut a handful of Santa Sweets in half, and toss them in a bowl with sliced Feta cheese, cubes of cucumber, a little parsley, and dress with a drizzle of olive oil and splash of red wine vinegar – season with salt and pepper. Set them aside while you pan saute some chicken tenders. Arrange the chicken tenders on your plate and spoon on your tomato salad along with all the juices.

Toss a container of Santa Sweets Grape tomatoes in a baking pan with a little chopped garlic, a drizzle of olive oil, pinch of Italian seasoning, salt, and freshly ground black pepper. Roast in a preheated 400 degree oven for 8 to 10 minutes, until they soften and the skins pop. Pour the roasted tomatoes along with all the pan juices into a small bowl. Spoon over fresh ricotta, pan seared tilapia fish, or sliced roasted turkey tenderloin.
