With bariatric surgery foods need to have a super moist texture. Salsa's add flavor and the right 'chew'. This mango salsa is one of my favorites - use it for salmon, halibut, shrimp, chicken, beef, pork, turkey... even burgers!
- 2 small ripe champagne or one large round mango, diced
- ¼ cup sweet or red onion, cut into small dice
- ½ cup chopped cilantro
- 1 small jalapeño, minced
- Juice of one line
- Salt and pepper
- ¼ teaspoon smoked paprika or cayenne
- 1 tablespoon olive oil
- Combine the mango, onion, cilantro, jalapeño and lime. Season with salt and pepper, paprika, olive oil and lightly toss. Spoon over salmon rubbed with smoked paprika and lime and. Roiled,mr lasted, grilled or pan seared.
