One Perfect Bite! These are soooo good. I use my 1 1/2 teaspoon metal ice cream scoop to portion goat cheese into balls, roll and then drop into a mixture of chopped parsley walnuts and craisins. It’s really easy and worth the effort to make an entire tray of these excellent little bites.

You can also use a tub of cheddar port wine cheese spread. Yum… and they’re as tasty as they are beautiful!

Donna, Members sometimes ask us why we don’t publish nutrition information with our recipes. We believe that if you’re eating primarily whole, healthy foods-an array of sustainably raised vegetables, fruits, nuts, seeds, beans, meats, fish, eggs and healthy fats and oils- you probably don’t need to stress about the numbers. We prefer to focus on food quality and trust our bodies to tell us what we need.

There are also variations in availability of ingredients and size of portions that post ops are able to consume – which makes it important for us to calculate our own recipe nutrition stats.

I’m not much of a cook, but this looks great and sounds great, except goat cheese AND port wine cheese are both a little strong in taste for me. Can you suggest another cheese that would be good, yet a little milder?
