While running errands at lunch I ran out of time to stop for lunch. I had things to get at the grocery store so I stopped at the salad bar and made a quick pass to see what I could work with. 10 min later I’d assembled and amazing Easy meal that will help me stay on track!
In a grilled red pepper I added some shrimp, a little dab of hummus. On the side I piled a little olive and feta salad, some cucumbers and radishes for a little crunch and a bit of creamy dressing on the side just in case. Quick. Delicious. Easy.
