When short on time, I have been known to take a shortcut or two in making a big bowl dish to take to a party or event, such as Superbowl or a Pot Luck Dinner.

One of my super powers, is that I can add enough flavor, also known as ‘doctoring up’ a quasi packaged food where no one really knows that it’s not homemade.

One of these meals is a big pot of meatballs in red sauce but not my grandma’s recipe.

Take a 12 ounce bag of Celentano Meatballs and simmer them in a pot with a jar of Mario Batali pasta sauce until hot, just 10 to 15 minutes, spoon into a bowl, hit it with a handful of freshly grated Parmesan or Locatelli cheese and a handful of chopped fresh basil leaves and BOOM, the dish is EMPTY in four minutes flat. Do not skip the cheese and basil, THAT’S where the flavor lives. I use Mario Batali sauce because the ‘Ingredients’ list reads like a (my) recipe.

Pair it with a big bowl of butter lettuce, grape tomatoes, sliced cucumbers that you have tossed with Newmans Own Lite Balsamic dressing.

Try this meal and you will see! Super low carb and tasty enough to put on your table in minutes – your entire family with dig in and go Mmmmmmm!
