Tomatoes are really good for us, plus they make a juicy salsa to help us to eat our protein. Remember that the more color the healthier the vegetable! Tonight is simply sliced tomatoes, sweet white onion, lots of scallions, broken up chunks of fresh mozzarella (the kind in the water) – then season with salt, pepper, olive oil and red wine vinegar. Easy peasy and super delish!
