IF I ate this every day for a month I bet I'd lose 20 pounds. There is nothing in that pot that was responsible for my being 300 pounds. Omg... corn? Oh no, not evil corn. Yes, corn... cutting an ear of fresh corn into rounds gives everyone a taste and adds about 3 carbs to your meal. THREE CARBS! It's clean and fresh and flavorful and tastes so good with the pan juices. What a meal... try this one.

Ummm, soft and tender and delicious. High protein, very low carb Ricotta Fritters. Watched Jamie Olive make this recipe with a much greater flourish! Here's the basic version I eat for lunch at my desk.

It is perfect tossed with olive oil, garlic, and Parmesan or red sauce. Even faster version is to pan saute your zucchini shreds and heat them in half a jar of Mario Batali or Gia Russo sauce. It is delicious!
