How to Make Perfect, Tender, Hard Boiled Eggs that practically fall out of their shells. It's Magic! Yep, you can thank Aunt Gail for this one too.

Do your eggs stick to the shell making them hard to peel without losing half the white? Do your deviled eggs look like they been nibbled by mice, blasted by a shotgun or rolled in the driveway? Do you tell yourself, 'the eggs were too fresh', because thats what Food Network says?

It drives me insane when my hard cooked eggs do not peel cleanly, to the point where I've BOUGHT bags of hard boiled eggs to make deviled eggs for a party.

Well, no more... thanks to Aunt Gail. I rolled my eyes when she told me that her eggs NEVER stick to the shells and always peeled smoothly, but she proved it. It blew my mind. (Of course I observed how she did it multiple times over a period of months because I did NOT believe it!)

Once it was irrefutable, I yelled, 'WHY ISNT THIS COMMON KNOWLEDGE'??? For YEARS, I've been buying eggs two weeks in advance so they'd be 'old', at room temperature, in cold water, bringing them to a boil, turning down the heat, removing from heat, covering, setting timers... blablablabla... because FAMOUS CHEFS said so.

Well, its all baloney and all this time we should have been listening to Aunt Gail.

Aunt Gail's Perfect Cleanly Peeled Hard Boiled Eggs
  1. Fill a large saucepan with water to a bit more than half and bring to a rolling boil over high heat.
  2. Take the eggs straight from the fridge and one at a time, place on a big metal spoon and carefully lower into the boiling water.
  3. The water will have stopped boiling after adding the cold eggs but will come back to boiling - time for 15 minutes total.
  4. While the eggs are boiling away, prepare a large bowl of half ice/half cold water. Set next to the stove on a tea towel.
  5. Carefully remove the eggs from the boiling water with a slotted spoon placing each into the ice water bath. Allow to cool for at least ten minutes.
  6. Eggs can be peeled and served or chilled in shells.

These eggs will practically jump from their shells, they peel perfectly and do not have that awful green sulfur ring! You have no idea right now, but what you have just read has changed your life.
