Roasted Sweet Potato

When you simply roast a sweet potato until softened, the outside skin separates from the bright orange inside that turns soft and sweet with a caramelized flavor. It is superb for Holiday Dinners. Plain. Jane. Sweet. Potato.

These are healthy carbs - the gorgeous rich color tells you that this vegetable is full of beta carotene vitamin A! Don't let anyone tell you that this is a bad food for you - sweet potatoes are not responsible for anyone being obese, it was the marshmallows, brown sugar, butter and pecans!

Ingredients

  • Small evenly sized sweet potatoes - one per person
  • olive oil
  • sea salt

Instructions

  • Rinse sweet potatoes in water, rub with a drop of olive oil, sprinkle with sea salt and roast on a baking sheet in a 350 to 400 degree oven for 45 to 60 minutes, or until soft when squeezed. Split and fill with a drizzle of sugar free maple syrup.
  • For the first time, enjoy the caramelized flavor of a delicious sweet potato rather than covering it up with sugar and marshmallow
