Tomatoes taste like Summer and the good news is that they're really good for us. Slice them and you've got an instant salad, a few chops and you've got a bowl of juicy salsa that moistens your protein.
Remember that the more color the more nutrients.
Tonight's Meal is NOT a recipe, its a technique. Protein and Vegetables - we know you've heard that before. The Vegetables are gorgeous ripe Summer heirloom tomatoes from the local market sliced and arranged on a platter, add a few paper thin slices of sweet white onion, lots of scallions, I've pulled apart bite sized pieces of fresh mozzarella with my fingers - then seasoned everything with a big pinch of sea salt, a few grinds of black pepper, a drizzle of olive oil and a sprinkle of red wine vinegar.
Then the easy peasy Protein - a platter of grilled Italian sausages - just cook on the stove in a skillet or grill them outdoors. I have a pot of fresh herbs at my kitchen door and a chopped handful makes the dish. What a great meal for the whole family!
