Magic Chocolate Strawberry Cookie Sandwiches

Suzi and I thought of this one after she made Chocolate Cookie Bites and I made Magic Strawberry Ice Cream.

Make both desserts ahead of time and using a small ice cream scoop sandwich a scoop between two little cookies. People will gobble them up before you can create a full tray!

First make and bake the Little Chocolate Cookies.

Then make the Magic Strawberry Ice Cream.

Then using a small metal ice cream scoop... assemble and place each on a sheet pan in the freezer. Allow to soften for about ten minutes before serving.
