High-Protein Cranberry Energy Bites
Soft, chewy, sweet-tart energy bites perfect for holiday hustle mode, busy mornings, or that “I need a little something but I still love my pouch” moment.
Featuring: Inspire Protein Kitchen Oatmeal and optional Inspire Protein Powder Vanilla Bean
Ingredients (makes ~12 bites)
- 1 scoop (or 1 serving) Inspire Protein Powder Vanilla Bean
- ¾ cup rolled oats (or reduce oats to ½ cup, since some oats are in the Inspire Protein Kitchen Oatmeal)
- ¼ cup unsweetened dried cranberries, chopped
- 2 tbsp unsweetened applesauce
- 2 tbsp almond butter (or peanut butter)
- 1 tbsp honey or sugar‑free syrup
- 1 tbsp chia seeds (optional)
- 2–4 tbsp water or unsweetened almond milk (as needed)
- Pinch cinnamon
- Pinch salt
Directions:
- In a bowl, combine the Inspire Protein Powder Vanilla Bean, Inspire Protein Kitchen Oatmea, chia seeds (if using), cinnamon and salt.
- Stir in almond butter, applesauce and honey/syrup.
- Add water/almond milk 1 tbsp at a time until a thick, doughy consistency forms.
- Fold in chopped cranberries.
- Roll into ~12 small bites.
- Chill 30 minutes to set.
Serving & Storage:
- Store: Airtight container, fridge 5 days
- Freeze: Up to 2 months
