Ingredients

  • 2 cups unsweetened almond milk or skim milk (for creaminess and softer texture)  
  • 1 scoop Inspire Unflavored Protein (optional extra boost) 
  • 2 large eggs, lightly beaten 
  • ½ teaspoon fresh grated ginger (optional — adds warm zing, soft texture) 
  • 1 scallion, finely minced (greens only) 
  • Pinch white pepper and salt to taste 
  • Optional: ¼ teaspoon turmeric (for color & anti‑oxidant benefit)
  • Optional: ½ cup soft tofu cubes (for added gentle protein & texture)

Directions

  1. Prepare the chowder base: In a medium pot, pour in the chicken broth + almond milk, and bring to a gentle simmer.
  2. Add the prepared packet of Inspire Corn Chowder (following the instructions on the packet) until fully incorporated and smooth.
  3. Add optional protein boost: If using the Inspire Unflavored Protein, whisk it into the warm (not boiling) soup base until fully dissolved.
  4. Season and add extras: Add ginger, turmeric (if using), white pepper, and salt to taste. Stir in the soft tofu cubes (if using) and allow them to warm gently.
  5. Create the egg‑drop ribbons: With the soup still at a gentle simmer (avoid heavy boiling), slowly drizzle the beaten eggs in a thin stream while stirring lightly in one direction. The eggs will form soft ribbons in the soup.
  6. Finish & serve: Remove from heat. Stir in the minced scallion greens. Let the soup settle for a minute. Serve warm in shallow bowls. The texture should be smooth, soothing, high‑protein, and comforting.

  • Keep the heat gentle to avoid tough egg threads — you want soft ribbons.
  • If you’d like even softer texture, you can lightly purée half the soup base before adding the eggs.
