PRO TIP: People who rely on the same foods for meals do MUCH better with weight loss and maintenance.

Homemade Tomato Soup
4 tablespoons butter
1 medium onion, cut into large wedges
One 28-ounce can tomatoes, I like Hunts brand Whole Tomatoes
1 ½ cups water or chicken broth
1/2 teaspoon fine sea salt, or more to taste

Melt 4 tablespoons of butter over medium heat in a Dutch oven or large saucepan.

Add the onion, tomatoes, water or broth and salt.

Bring to a boil, reduce heat and simmer uncovered for 30 minutes, stirring occasionally. Blend using an immersion stick blender or a regular blender (IMPORTANT!!! When pureeing hot soup, remove the center part of the lid and cover with a kitchen towel so the steam releases and the hot soup doesnt explode from the blender)

Adjust salt and pepper and serve with a big pile of Inspire Grilled Cheese Protein Crunchers and a couple slices of rolled deli turkey.
