A nice meal that is portable - even if right now that means you take your lunch on a plate to the backyard!

Once back to work, it will be great to haul from home in your lunch bag.

How did I make this?

Add teaspoon of Inspire Flatbread mix to a well beaten large egg along with a pinch of salt and freshly ground pepper.

Pour into a 7 inch nonstick, Pam sprayed, preheated skillet and cook until set, carefully flip and cook an additional 30 seconds before transferring to cutting board.

Arrange a few lean sandwich meats with greens - my wrap has baby arugula, mozzarella, prosciutto, and sliced tomato - and carefully roll.

It is sort of a hand omelet and it is a very cool way to eat.
