Ingredients (Makes 12 Mini Quiches)
- 1 packet Inspire Protein Western Omelet or 1 packet BariatricPal Bacon & Cheese Hot Breakfast (Or do half & half for a flavor mashup.)
- 1/3 cup Fairlife or another ultra-filtered high-protein milk
- 1/3 cup finely diced lean ham
- 1/4 cup shredded 2% cheddar or your fave reduced-fat cheese
- 1 tbsp diced green onion or spinach (optional but festive)
- Pinch of salt + pepper
- Olive oil spray
Directions
- Preheat oven to 350°F. Spray a nonstick muffin tin with olive oil.
- In a mixing bowl, whisk 1 packet Inspire Protein Western Omelet or 1 packet BariatricPal Bacon & Cheese Hot Breakfast + high-protein milk until smooth.
- Stir in ham, cheese, and green onion and spinach.
- Divide mixture into the muffin cups, filling each about 2/3 full.
- Bake 14–17 minutes, until puffed and set.
- Let cool for 5 minutes — they’ll deflate slightly (totally normal!) — then pop out and serve warm.
