Shrimp Stuffed Avocado
Another super simple lunch or light supper plate that fits in with our Choose One Fat lesson.
Beautifully ripe avocado is our fat in this dish - it replaces the mayonnaise! Shrimp and avocado are a match made in heaven.
There is not a recipe for this one as its that easy! I fork mash one half of a ripe avocado, add a few poached shrimp, generously season with salt and pepper and put it back into the avocado shell. Done.
