This one is easy.

There is nothing like a fresh salsa to spoon over roasted, broiled, pan-seared, grilled chicken shrimp pork fish or beef. Or even with your breakfast!

Arrange a couple of handfuls of tomatillos (I remove the paper shells, rinse and cut in half) split jalapenos and serranos, onion wedges, and garlic on a sheet pan. Broil until well charred as in my photo.

Scrape everything on the pan, plus any juices into a food processor or blender along with a squeeze of fresh lime and a big pinch of salt. Pulse.

For a creamier version, add a small avocado to the roasted vegetables in the food processor. Delicious.
