Shrimp and spinach salad with cherry tomatoes and red onion on a brown plate beside a fork on a napkin.

Monday: Baby Spinach Salad with Shrimp - NO RECIPE NEEDED! Make this any time you want something light and fresh. I keep a bag of baby spinach in the fridge! Add a few tomatoes a bit of shaved red onion and a few shrimp. Done. Drizzle with olive oil and balsamic.

Hearty tomato based soup with ground meat and chopped vegetables in a square dish.

Tuesday: Stuffed Pepper Soup - This is super delicious and has the exact flavors of my Grandma's Stuffed Peppers. I use a bit of Quinoa for body and its still super healthy and crazy good. I make mine on stove top, Suzi Shaw makes her in the slow cooker, you choose!

Raw salmon fillets on a sheet pan with asparagus, sliced lemons, and fennel seasoned for baking.

Wednesday: Sheet Pan Roasted Salmon, Asparagus and Fennel - A simple way to cook. Arrange everyone on a sheet of parchment on a baking sheet, season, and roast for 15 minutes. Everything is done at the same time and you only have one pan to rinse!

Baked broccoli and cheese casserole in a white dish with eggs and cheese in the background.

Thursday: Crustless Broccoli Egg and Cheese Frittata - This has a great soft texture, it is economical, can be eaten for breakfast, lunch or supper, plus reheats beautifully. You will LOVE it.

Lettuce wrap filled with sliced turkey, cheese, tomatoes, pickles, and seasonings on a patterned plate.

Friday: Leftover Stuffed Pepper Soup & Bariatric Italian Sub - NO RECIPE as this is just slices of very thin ham turkey salami and provolone layered on romaine with hot peppers and a drizzle of olive oil, vinegar and sprinkle of Italian seasoning.

Plate with tomato-sauced meat and a side of chopped lettuce, tomatoes, and olives.

Saturday: Smothered Pork Chops - A short cut dish, brown the meat and simmer in a jar of sauce. Super tender if you buy the right cut.

Roasted split chickens in a pan with browned skin, garlic, and charred lemon halves.

Sunday: Roasted Garlic & Lemon Game Hen - Perdue Cornish Hens are juicy and HALF is a perfect portion. NO RECIPE, just squeeze a whole lemon over the chicken, scatter with sliced garlic, and hit it with salt and lots of black pepper, bake at 400 degrees until golden and juices run clear, 30 to 35 minutes.

Bowls of smooth yellow vanilla pudding on a striped cloth with two spoons beside them.

Sugar Free Sweet Treat: Jello Sugar Free Vanilla Pudding. Make a batch from the box, the taste is FAR better than the kind in the plastic tubs. I manage my sweet tooth with a sugar free dessert maybe once a week... NOT every night.

This keeps me focused and on track, but mentally satisfied. I never use real sugar and every now and then am thankful for a few berries, some sugar free jello or a small dish of sugar free pudding.

We know you are losing weight and loving this lifestyle. THIS HAS WORKED OUT SO WELL THIS WEEK, LET'S DO IT AGAIN. Head on over to Inspire Diet Week 5 Super Suppers!
