Not humble about this one. I make FANTASTIC meatloaf! Wednesday at my casa is often Meatloaf Night as the local Fresh Market has a weekly $2.99/pound fresh ground chuck deal.

NO bread crumbs as I have discovered that you do not need 'a binder'. It took me years to figure it out and I think you'll like both the flavor and the texture. Firm, yet super moist and delicious. It's my husbands favorite meal.

Ingredients

  • 1 large onion, very finely chopped
  • 1 tablespoon butter
  • 1 pound lean ground beef
  • 1 large egg
  • 4 ounces cheddar, freshly grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup Heinz Low Sugar Ketchup

Instructions

Preheat oven to 350 degrees. Sauté the onion in the butter in nonstick pan over medium high heat until softened and golden. Remove from heat to cool.

In a large bowl, combine the beef, egg, cheddar, salt, pepper, garlic powder, Worcestershire, 1/4 cup ketchup and the cooled cooked onions until well blended. Turn out into small baking dish and form using your hands into a narrow slightly flattened loaf shape. (or use a loaf pan)

Bake 30 minutes, remove from oven, smear with remaining ketchup, return to oven and cook to an internal temperature of 155 degrees, an additional 10 to 15 minutes. Allow meatloaf to rest 15 minutes before cutting into one inch slices.
