Tomato Cucumber Salad
EAT YOUR VEGETABLES... they are important to your life!
Make a big bowl of salad to marinate on the kitchen countertop while you go out and grill your hot dogs, or kielbasa, or burgers, or pork chops. It is EASY. It is DELICIOUS. It is INEXPENSIVE. It is GOOD FOR YOUR FAMILY.
My summer protein for the grill this evening is Hormel Marinated Pork Loin... its super tender and juicy. I buy one at Walmart whenever I shop. and it keeps in the fridge for at least a week. Its CONVENIENT as all get out. I open the package, dry it, slice it about one inch thick and lay the slices on a platter.
While the grill heats, I make my salad... then head outside. Do not overcook pork. These slices are 4 minute per side and then OFF the grill to rest for a few minutes before serving so juices can reabsorb into the meat.
This meal is to the table in 20 minutes and it is DELICIOUS, filling and inexpensive.
Tomato Cucumber Salad: NO RECIPE other than it is 2 cut up ripe tomatoes, half a large cucumber peeled and sliced, a few slices of red onion, salt, pepper, 3 tablespoons olive oil and 1 tablespoon red wine vinegar, basil leaves.
