Juicy crunchy and tastes a lot like Fuji apple but not so sweet. That's jicama!

This is a simple salsa or if you prefer to call it a salad to go alongside something with a little fat... ribs, a burger, some roasted sausages or pork chop. The lime and acidity of the fruit cuts through the fat. Perfect pairings.

Gently combine julienned jicama, sliced mango, the juice of a couple of limes, chopped cilantro... a tablespoon of olive oil, a bit of salt and a sprinkle of chipotle or smoked paprika. Chill until serving! Insanely delicious.
