Pro Tip ~~ Its smart to have a GO TO meal to rely on.

When you are tired and you don't feel like making anything elaborate, have a dish 'in your back pocket' that you can quickly whip up that tastes GREAT.

Breakfast for dinner is fast, tasty and full of protein! I make Two Egg Spinach Omelets - sometimes I paint them with sriracha hot sauce, sometimes I fill them with ricotta, sometimes BOTH. These omelets are my GO TO meal. Today I was out of Sriracha.

In studies, it has been shown that people who maintain their weight year after year have one thing in common - consistency. They tend to eat the same number of calories day in day out and don't fly off the rails for birthdays vacations and anniversaries. They have a few standard meals and 'go to' them when they are short on time.

Make an Omelet with me

  • Pour a bit of olive oil into a small non stick skillet placed over medium heat,
  • Sizzle a few slices of garlic in the oil and add a handful of baby spinach - season with salt and pepper and cook until the spinach wilts, 30 to 45 seconds.
  • Scramble two eggs in a small bowl, add to the sautéed spinach and hear the sizzle, give it a mix with the fork to blend in the spinach and cook until it sets and you can flip it, 2 to 3 minutes,
  • Spoon ricotta down the center, and fold over onto a small plate. If you like hot sauce and you are in the mood... get fancy with the sriracha squiggle!
