Christmas Day - A simple but delicious bariatric friendly menu

Since it is Christmas I get a little fancy pants with the menu but I do keep it within the bounds for low carb and high protein. Each recipe has just a few simple ingredients as that is how I cook these days.

This is the one day a year that I do make potatoes, but they must be spectacular and these certainly are. Last year Ty asked me while eating dinner WHY DON'T WE EAT THESE POTATOES MORE OFTEN? (Bless His Heart... he does not realize he is married to an South Beach Atkins for life sort of gal)

Ordinary carbs are not worth eating, but for extraordinary ones I'll make a deal with myself that I can have some after I've eaten half of my protein.  More often than not, when that time comes, I don't bother to cash in on the deal. I am too full! Its called fooling your own 'fat brain' and it works beautifully so TRY IT.

Warm Brie with Preserves & Almonds

A simple dish to serve during the Holidays. It takes ten minutes to put together, and it is truly outstanding. Warm Brie... fugetdaboudit!

Shrimp Cocktail

Very easy to assemble and always a favorite party dish! Just arrange cooked shrimp on a platter and serve with slices of lemon and homemade cocktail sauce (Heinz Low Sugar Ketchup with bottled horseradish and hot sauce to taste)

Prime Rib of Beef with Horseradish Sauce

My signature holiday dish. I make this once a year and it is spectacular. It is also very simple if you have a meat thermometer. The most important step is to allow it to rest, otherwise you will have grey dry beef, instead of juicy and deep rose and tender.

Read through the recipe so you understand what you will be doing and Prime Rib will be your holiday show stopper that is so easy you have time to enjoy your Christmas Day. It is also very tender for bariatric people to eat. The Horseradish Sauce is made with Greek yogurt rather than heavy cream and sour cream.

Roasted Fingerling Potatoes

These super flavorful tiny potatoes are a vegetable. Dont laugh, because THESE potatoes are not why we were Obese - there isnt any cream, or butter or cream cheese or bacon bits or sour cream on them. They're lovely little naked potatoes. Have a few and understand the difference. Cut these small long potatoes in half lengthwise, toss with olive oil, salt, pepper, a few smashed cloves of garlic and some fresh sage or rosemary. Roast at 350 degrees until tender. It takes about 20 minutes.

Green Beans Tossed with Olive oil and Almonds

I love the 'skinny green beans' called Haricot Vert, that benefit from a quick toss in a hot skilled with olive oil, salt and pepper, with slivered almonds.

No Sugar Holiday Cheery Cherry Cheesecake

This one makes it Christmas! I love cheesecake and I am not humble in that I know I make a great one. It is also very simple with few ingredients so give it a try!
